Ingredients

  • 1 kg paprika peppers (red and yellow)
  • 400 g diced tomatoes
  • 1 onion
  • 2 tbsp olive oil
  • 2 tsp sweet paprika powder
  • Salt
  • black pepper (freshly ground)

Instructions

    Halve the paprika peppers lengthwise, remove seeds and white membranes, wash the halves, quarter them, and cut into thin strips.

    Blanch the tomatoes, peel and remove stem ends. Cut the tomatoes into thin strips as well. Peel and halve the onions, then slice into thin half-rings.

    Heat the oil in a wide pot, sauté the onions, and sprinkle paprika powder over them. Add the pepper strips and tomatoes to the pot, season with salt and pepper, and cook on high heat for about 3 minutes until some juice evaporates. Reduce heat, cover, and simmer gently for about 20 minutes. Taste and serve.
