Ingredients
- 400 ml Vegetable broth
- 400 g red lentils
- 4 tomatoes
- 1 bunch freshly chopped mint
- 4 tbsp olive oil
- 1 organic lime (juice and zest)
- Salt
- Pepper (freshly ground)
- 500 g tofu (thin strips)
- 1 tsp chili flakes
Instructions

Bring the vegetable broth to a boil, add the lentils, cover and simmer gently for about 5-10 minutes. The liquid should be absorbed; adjust by adding or removing broth as needed. Then let it cool slightly uncovered.

Wash the tomatoes, remove the stems, dice the flesh, and mix with chopped mint in a bowl. Add 2 tbsp olive oil, lime juice and zest, and stir in the lentils. Season with salt and pepper to taste.

In the remaining oil, fry the tofu strips until golden brown on both sides. Season with salt, pepper, sprinkle chili flakes, and serve atop the lentils.
