Ingredients

  • 1 Perlhuhn
  • Salz
  • Pfeffer aus der Mühle
  • Estragon
  • 100 g gemischte Sprouts
  • 1 EL Sojasauce
  • 1 Msp Zucker
  • 25 g weiche Butter

Instructions

  1. 1.

    Preheat the oven (electric: 250°C, gas: level 6). Wash and dry the chicken inside and out. Salt and pepper both sides.

    Rinse the tarragon, shake it dry, and remove the leaves. Mix with sprouts, soy sauce, and sugar; fill the chicken cavity and brush all around with butter.

    Place the chicken breast-side down in a roasting pan and bake uncovered on the lower rack for 15 minutes.

    Turn the chicken over. Add 125 ml water and continue baking for another 10-15 minutes. Let it rest 10 minutes in an off, open oven.

    Carve the Perlhuhn and serve with sauce.

    For the sauce strain the stock, bring to a boil once, then thicken with a sauce binder. Season with salt and pepper.
