Ingredients
- 300 g yellow lentils
- 3 Carrots
- 3 tomatoes
- 1 spring onion (thinly sliced)
- 2 shallots
- 0.5 bunch parsley (chopped)
- 0.5 lemon (juiced)
- 1 small glass sardines (in oil)
- Sea salt
- 1 tsp black pepper (finely ground)
Instructions

Cook the lentils in 600 ml water for 15-20 minutes until tender.

Wash, peel and dice the carrots; after 5 minutes add them to the lentils and continue cooking.

Peel the tomatoes, halve, seed and dice. Drain the sardines slightly and chop them. Dice the shallots finely.

Sauté the spring onions, shallots and sardines in a pan until fragrant.

Drain the lentils with carrots, then combine with tomatoes, parsley, lemon juice, salt and pepper; mix well.

Serve warm on plates.
