Ingredients

  • 200 g split lentils
  • 1 potato
  • 1 onion
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • a pinch cumin
  • a pinch cinnamon powder
  • Salt
  • Pepper (freshly ground)
  • flour
  • 300 g carrots
  • 300 g green beans
  • 1 Garlic clove
  • 1.5 cm fresh ginger
  • 1 tbsp red curry paste
  • 400 ml coconut milk
  • vegetable oil (for frying)

Instructions

    Rinse the lentils in a sieve, transfer to a pot, add enough water to just cover them and simmer for about 25 minutes over medium heat.

    Peel and grate the potato and onion.

    Drain the lentils, let them cool slightly, then mix with the grated potato, onion, spices, and enough flour to form a workable dough; shape into small balls.

    Peel the carrots and cut diagonally into thin slices. Wash and trim the green beans. Peel and finely chop the garlic and ginger, sauté in a pot with 2 tbsp oil until fragrant. Add the vegetables, cook briefly, stir in the curry paste, pour in coconut milk, season with salt and pepper, and simmer over medium heat for about 10 minutes.

    Heat plenty of oil in another pan and fry the lentil balls until golden brown on all sides. Remove with a slotted spoon, drain, and serve atop the braised vegetables.
