Lentil Dal with Mint Yogurt
This aromatic lentil dal with mint yogurt from Spoonsparrow warms you from the inside.
Ingredients
- 7 oz red lentils
- 0.35 oz ginger (1 piece)
- 1 yellow bell pepper
- 2 tbsp Coconut oil
- 1 tsp mustard seeds
- 0.18 oz turmeric powder
- 0.18 oz ground cumin
- 0.18 oz ground coriander
- 0.18 oz ground cardamom
- 4 sprigs Mint
- 5.8 oz Greek yogurt (10% fat)
- Salt

Rinse the lentils in a sieve. Peel and finely chop the ginger. Halve, deseed, wash, and dice the bell pepper.

Heat the oil in a pot. Sauté the ginger and bell pepper cubes for 3 minutes over medium heat. Add the lentils, sprinkle with spices, and toast for 2-3 minutes while stirring. Then add enough water so that it covers the lentils by about 2 cm. Simmer covered over low heat for about 25 minutes, until the lentils are cooked and the dal is creamy. Meanwhile, wash and dry the mint; chop about half of it finely and mix with yogurt.

Season the dal with salt and serve in bowls. Spoon some yogurt on top, sprinkle with the remaining mint, and serve with the remaining yogurt.
