Lemon Thyme Poularde

Ingredients
- 1 Poularde (ca. 1,3kg)
- 1 thinly grated lemon zest
- thyme
- 1 Garlic clove
- Salt
- fresh ground pepper
- 45 g butter
- 3 tbsp olive oil
- 8 shallots
- 2 tbsp lemon juice
- chicken broth
- 250 g mild bell peppers
- sauce thickener
- smooth parsley
Instructions

Preheat oven to 220°C. Wash and pat dry the poultry. Rub inside and out with lemon zest, thyme leaves, garlic cubes, salt, and pepper.

Melt butter, stir in oil. Brush the poultry with 2 tablespoons of the butter‑oil mixture. Place breast side down in a roasting pan. Roast on the second rack for 40 minutes, brushing more of the mixture frequently. Peel, halve, and add shallots.

Turn the poultry midway. Add lemon juice and hot broth. Continue cooking for 35–40 minutes, brushing with the fond often.

Remove the poultry. Add bell peppers and simmer about 3 minutes. Taste and optionally thicken the sauce. Sprinkle chopped parsley if desired.
