Balsamic Poultry with Limes and Mint

Ingredients
- 1 pre-cooked poultry
- Salt
- 2 Garlic cloves
- 3 tbsp balsamic vinegar
- 4 tbsp olive oil
- freshly ground pepper
- 4 limes
- 2 sprigs Mint
- broth
- whipping cream
- sauce thickener
Instructions

Wash and pat dry the poultry. Salt inside and out. Mix garlic, vinegar, 2 tbsp oil and pepper, then rub onto the poultry. Let it marinate for about 30 minutes. Reserve the remaining mixture.

Rinse limes hot, pat dry and pierce them several times around. Wash and pat dry mint leaves. Place half of the leaves and limes into the cavity of the poultry. Secure with wooden skewers carefully. Tie legs together with kitchen twine. Cross wings on the back.

Brown the poultry in the remaining hot oil in a roasting pan for about 10 minutes all sides. Roast in a preheated oven at 200°C for approximately 1½ hours, basting several times with drippings, reserved marinades and broth.

Remove the poultry and keep warm. Add cream to the sauce, thicken if needed, season, and stir in the remaining finely chopped mint leaves.
