Lemon Soup with Chicken

Ingredients
- 4 stalks lemongrass
- 2 kaffir lime leaves
- 50 g galangal
- 50 g ginger
- 1 red chili pepper
- 1.4 l chicken broth
- 400 g chicken breast fillet
- 50 g Mu-Err mushroom (dried)
- 120 g button mushrooms
- 160 g shiitake mushrooms
- 4 tbsp Lemon juice
- 4 tbsp fish sauce
- Salt
- Pepper

Peel the lemongrass and slice lengthwise into thin strips; roughly chop the lime leaves. Peel galangal and ginger, cut crosswise into fine slices. Wash the chili, remove seeds, finely chop. Combine all with chicken broth and simmer for 12 minutes, add the chicken breast fillet, simmer an additional 5 minutes, then remove the chicken and slice crosswise into strips.

Clean the mushrooms; slice the button and shiitake mushrooms. Add them to the broth along with the sliced chicken, let steep for 4 minutes. Season with lemon juice, fish sauce, salt, and pepper. Garnish with coriander before serving.
