Lemon Sorbet Drink

Ingredients

  • 0.7 l cold mineral water (or sparkling wine)
  • 2 untreated lemons
  • 3 lemons
  • 80 g sugar
  • 80 ml white wine
  • 1 Egg white

Instructions

  1. 1.

    Wash and dry two lemons with hot water, slice off four wedges and set aside. Thinly peel the zest from the remaining untreated lemons.

    Bring lemon zest, sugar, and wine to a boil in a pot while stirring; then let it simmer for 5 minutes on a turned-off burner. Cool and strain through a sieve.

    Squeeze the remaining lemons. Beat the egg white halfway stiff.

    Add the lemon juice to the wine mixture and stir; fold in the beaten egg white. Pour the mixture into a shallow metal bowl and freeze for about 4 hours, stirring occasionally. (Alternatively finish in an ice cream maker)

    Distribute the mineral water (or sparkling wine) over four tall glasses. Use an ice scoop to remove one sphere of sorbet per glass and place it in the drink. Garnish with lemon wedges and serve immediately.
