Ingredients
- 200 g sugar
- 150 ml water
- 350 ml lemon juice (approx. 8 untreated lemons)
- 2 egg whites
Instructions

Boil sugar with water, then let it cool.

Cut lemons in half, squeeze out juice and mix with the sugar solution. Scrape the remaining pulp from the lemon halves carefully with a spoon.

Whisk egg whites until stiff and fold them into the liquid.

Finish in an ice cream maker or place in a bowl in the freezer, stirring every 30 minutes until the sorbet is scoopable.

Then fill the lemon halves and freeze.

Remove the sorbet from the lemons 10 minutes before serving and let it soften.
