Ingredients

  • 1000 g ready‑to‑cook sea bass (4 whole sea bass)
  • Salt
  • black pepper (freshly ground)
  • 4 sprigs basil
  • 4 sprigs Rosemary
  • 2 Garlic cloves
  • 3 cm ginger
  • 100 g lemon marmalade
  • 2 tbsp olive oil

Instructions

    Rinse the fish and pat dry. Season the inside with salt and pepper. Rinse the herbs, shake off excess water, and stuff them into the cavities. Tie with kitchen twine.

    Peel and finely chop the garlic and ginger. Mix with the marmalade. Season the fish with salt and pepper and drizzle with olive oil. Place on a grill pan over high heat and spread the marmalade mixture on top. Cook covered for about 15 minutes.

    Remove the fish from the grill, plate it, and serve.
