Lemon Salmon Tartare

Ingredients
- 300 g very fresh salmon fillet
- 2 Spring Onions
- 1 untreated lemon
- Salt
- white pepper
- 1 pinch sugar
- 1 tbsp argan oil
- 1 tsp Mustard
- 3 stalks coriander leaves

Wash the lemon, dry it with a towel and cut in half. Squeeze one half for juice, slice the other into four thin rounds. Remove coriander leaves from stems and finely chop. Dice or mince the salmon fillet into small cubes.

Wash the spring onions, drain them and slice into fine rings. Mix lemon juice with oil, salt, sugar, mustard and white pepper; marinate the salmon in this mixture, fold in coriander, and layer the tartare with a lemon slice in each glass. Chill until serving.
