Ingredients
- soft butter (for the pan)
- flour (for the pan)
- 2 untreated lemons
- 150 g flour
- 150 g cornstarch
- 1 tsp Baking powder
- 250 g butter
- 5 eggs
- 225 g sugar
- powdered sugar (for dusting)

Preheat the oven to 160°C fan. Grease and flour a loaf tin.

Grate the zest of the lemons and squeeze out the juice. In a bowl combine the flour, cornstarch and baking powder. Melt the butter in a small saucepan.

Beat the eggs with an electric mixer until frothy. Add lemon juice and zest. Alternately fold in the melted butter and dry mixture into the egg cream until a smooth batter forms. Pour into the tin and bake for about 1 hour until golden brown (test with a skewer).

Remove from oven, let rest briefly and cool on a wire rack.

Dust with powdered sugar before serving.
