Lemon Pasta with Shrimp

Ingredients

  • 350 g shrimp (frozen)
  • 300 g whole wheat tagliatelle
  • Salt
  • 2 Organic Limes
  • 4 tbsp vegetable broth
  • Pepper
  • 1 tsp Olive oil
  • 1 bunch Basil

Instructions

    Let shrimp thaw, rinse cold and pat dry.

    Cook pasta according to package in salted water until al dente.

    Meanwhile wash limes, pat dry. Cut 4 slices off ends and set aside. Grate zest from remaining shells, squeeze juice.

    Whisk vegetable broth, salt, pepper, and lime juice together.

    Heat olive oil in a pan. Cook shrimp about 2–3 minutes while stirring over medium heat. Season with salt and pepper, set aside warm.

    Wash basil, shake dry, pluck leaves and roughly chop.

    Drain pasta, reserving half a cup of cooking water. Mix pasta with reserved water, lime broth mixture, shrimp, basil, and lime zest. Plate on warmed dishes, season with pepper, garnish immediately with lime slices.
