Lemon Muffins with Sugar Frosting

Lemon muffins with sugar frosting from Spoonsparrow – a light and delicious dessert.

Ingredients

  • 150 g soft butter
  • 100 g cane sugar
  • 1 packet vanilla sugar
  • 3 eggs
  • 200 g spelt flour
  • 0.5 packet Baking powder
  • 1 pinch salt
  • 1 tsp lemon zest
  • 250 g powdered sugar (from cane sugar)
  • 1 tbsp Lemon Juice
  • 2 tbsp water
  • red food coloring
  • pink sugar pearls
  • pink sugar sprinkles

Instructions

    Preheat oven to 180°C (fan 160°C; gas: level 2–3). Line a muffin tin with 20 paper cups.

    Beat butter, cane sugar, vanilla sugar and eggs until fluffy. Mix spelt flour, baking powder, lemon zest and salt, then fold into the batter. Spoon the dough into the cups and bake in the preheated oven for about 20–30 minutes.

    Remove muffins, let them cool briefly in the tin, then lift out and allow to cool completely. For the glaze whisk powdered sugar with lemon juice, water and food coloring until smooth. Spread the frosting over the muffins and decorate as desired with sugar sprinkles.
