Ingredients

  • 6 sheets white gelatin
  • 3 lemons (1 untreated)
  • 125 ml dry white wine
  • 3 tbsp sugar
  • 4 fresh figs
  • 1 packet vanilla sugar
  • 4 tbsp white port wine (optional)

Instructions

    Soak the gelatin in cold water for about 10 minutes. Rinse the untreated lemon under hot water, thinly slice a bit of zest and set aside for garnish.

    Squeeze the lemons, strain the juice through a fine sieve. Top up to 0.5 l with wine and water. Pour into a pot, stir in sugar, heat while stirring, then remove from heat. Squeeze out excess liquid from gelatin sheets and dissolve them in the hot mixture.

    Pour the lemon syrup into four dessert glasses and chill until set in the refrigerator.

    Wash and quarter the figs. Sprinkle with vanilla sugar and drizzle with port wine. Cover and refrigerate to infuse. Arrange on top of the jelly for serving. Slice lemon zest into fine strips and sprinkle over the dish.
