Ingredients
- 5 g fresh ginger
- 200 g mascarpone
- 1 tsp ground ginger
- 1 tsp lemon zest (untreated)
- 1 tbsp Lemon Juice
- 100 ml whipping cream
- 8 gingerbread cookies (without glaze)

Peel the ginger and grate finely. Mix mascarpone with the fresh and ground ginger, lemon zest, and lemon juice. Whip the cream until stiff peaks form and fold into the mascarpone mixture.

Hold a gingerbread cookie at an angle and spread some of the cream on it; press a second cookie onto it and spread again. Arrange four such angled cookies side‑by‑side. Repeat with the remaining four cookies, then place both rows back to back on a plate. Spread the remaining cream generously around the cake and refrigerate overnight.
