Lemon Garlic Shrimp Skewers with Rice

Ingredients

  • 400 g shrimp (pre‑cooked)
  • 2 Organic lemons
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 250 g rice
  • Salt
  • 4 wooden skewers

Instructions

    Rinse shrimp under cold water, pat dry and thread onto 4 skewers.

  2. 2.

    Wash lemons hot, pat dry. Cut off 4 slices for garnish; grate zest from remaining lemons and squeeze juice.

    Peel garlic, blend with lemon juice, zest, and 1 tbsp oil into a fine paste. Brush shrimp with mixture and marinate in refrigerator for about 30 minutes.

    Meanwhile cook rice in boiling salted water according to package instructions.

  5. 5.

    Heat remaining oil in a pan. Sear shrimp over medium heat on both sides for about 7 minutes until cooked through.

    Distribute rice onto 4 plates, place skewers on top, and garnish with lemon slices.
