Ingredients

  • 600 g cod fillet
  • 1.5 shallots
  • 3 tbsp olive oil
  • 110 ml fish stock (glass)
  • 1 lemon (juice and zest)
  • 2 saffron strands
  • 1 tsp Honey
  • 2 tbsp small capers
  • Salt
  • black pepper (ground)

Instructions

    Peel and finely chop the shallots; sauté in 2 tbsp olive oil with the saffron strands until translucent. Add fish stock, lemon juice and zest, and simmer for about 5 minutes. Season with salt and pepper, add the capers, then remove from heat.

    Wash the cod fillets, pat dry, and cut into pieces. Season with salt and pepper. In a pan, brown each side in the remaining oil for 2–3 minutes without browning. Add to the sauce and let simmer for another 15 minutes. Serve warm or cold.
