Strawberry Berry Cake
The Strawberry Berry Cake from Spoonsparrow is a real eye-catcher and always receives great feedback.
Ingredients
- 125 g butter
- 150 g whole cane sugar
- 3 eggs
- 1 tbsp Lemon Juice
- 75 ml milk
- 300 g spelt flour type 1050
- 50 g cornstarch
- 1 tsp Baking powder
- 200 g Cream cheese
- 150 g quark
- 1 Vanilla bean
- 400 g Strawberries
- 250 g blackcurrants
- 75 g ground hazelnuts

Beat butter and 120 g sugar until fluffy, then add eggs, lemon juice and milk. Mix in flour, cornstarch and baking powder. Pour batter into a springform pan and bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for about 40 minutes.

Meanwhile prepare the cream by mixing cream cheese, quark and remaining sugar. Split the vanilla bean lengthwise, scrape out the seeds with a knife and add to the cheese mixture.

Wash and clean strawberries and blackcurrants, trim green stems from strawberries. Cut half of the strawberries into halves or quarters. Optionally roll some blackcurrants in whole cane sugar for garnish.

When the cake is finished baking, remove it from the oven and let it cool completely. Then release it from the pan and cut horizontally once.

Spread a thin layer of cream on the base of the cake and evenly distribute blackcurrants and sliced strawberries over it. Spoon about half of the remaining cream onto the fruit and smooth it out.

Place the top part of the cake back on and spread the rest of the cream around the edges. Sprinkle with ground hazelnuts and garnish the strawberry berry cake with extra strawberries and, if desired, sugar-coated blackcurrants.
