- 2 pre‑cooked trout (about 350 g each)
- 2 cloves garlic
- 1 banana leaf (from an Asian store)
- 0.5 bunch spring onions
- 1 tsp freshly chopped ginger
- 2 tbsp Lime juice
- Salt
- Pepper (freshly ground)

Wash the trout and pat dry. Peel and roughly chop the garlic. Wash, trim, and cut the white and light green parts of the spring onions into pieces. Blend garlic, spring onions, ginger, 1 tbsp oil, and lime juice; season with salt and pepper. Brush the mixture inside and out of each trout and let marinate for about 1 hour. Rinse, dry, and cut the banana leaf into two large halves so that one trout can be wrapped in each. Place a trout on each leaf and sprinkle with pepper.

Cover the top and bottom of the banana leaf over the trout, then fold left and right to form a packet; secure with toothpicks if needed. Grill the trout packets on a hot grill for 7 minutes per side or bake in a preheated oven at 220°C for about 30 minutes.
