Lemon Chive Soup with Marjoram

Ingredients
- 750 g leek
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 1 tbsp freshly chopped marjoram
- 100 ml dry white wine
- 750 ml vegetable broth
- 100 ml whipping cream
- Salt
- pepper, freshly ground
- nutmeg
- 0.5 untreated lemon (juice and zest)
- 2 tbsp Sour cream
- marjoram, for garnish
Instructions

Wash, trim, and slice the leek into rings. Peel the onion and garlic; dice the onion finely.

Heat the oil in a pot and sauté the onion and leeks, then press in the garlic, add marjoram, and cook briefly while stirring.

Pour in wine and broth, bring to a boil, cover, and simmer for about 20 minutes. Remove from heat, set aside some rings for garnish, puree the soup, stir in cream, and season with salt, pepper, nutmeg, lemon juice, and zest. Taste and adjust seasoning.

Serve hot or cold in bowls, garnished with leek rings and marjoram, topped with a drizzle of sour cream.
