Radish Cream Soup

Ingredients
- 1 bunch radishes
- 1 onion
- 2 medium starchy potatoes
- 1 tbsp sprouting oil
- 300 ml Vegetable broth
- 3 tbsp crème fraîche
- Salt
- pepper (ground)
Instructions

Wash radishes with leaves, set aside 2 radishes and some leaf greens, roughly chop the rest.

Peel and dice the onion.

Peel and cube the potatoes.

Sauté onion in hot oil until translucent, add chopped radishes with greens and potato cubes, cook briefly, then pour in broth, cover and simmer for about 20 minutes. Blend everything, stir in 2 tbsp crème fraîche, bring to a boil, season with salt and pepper.

Slice remaining radish leaves into strips.

Serve soup on warmed plates, top with a dollop of crème fraîche and radish strips, garnish with radish greens and serve.
