Ingredients

  • 1 chicken (approx. 1.4 kg; alternatively 8–10 chicken wings)
  • Salt
  • black pepper (freshly ground)
  • 2 pickled lemons (jar)
  • 70 g green olives
  • 1 onion
  • 2 Garlic cloves
  • 4 tbsp olive oil
  • 200 ml poultry stock
  • 125 ml dry white wine
  • 6 sprigs Thyme
  • 3 tbsp honey

Instructions

    Preheat the oven to 180°C (356°F) with upper/lower heat.

    Wash the chicken, pat dry, cut into 8 pieces and season with salt and pepper. Quarter the lemons and drain the olives. Peel the onion and garlic; quarter the onion as well. In a roasting pan, brown the chicken pieces in hot olive oil on all sides. Add the lemons, onion, garlic, and olives, then pour in wine and stock. Rinse the thyme, pat dry, and place over the chicken. Roast in the oven for about 30 minutes, stirring occasionally. During the last 10 minutes brush the poultry with honey to brown it. If needed, turn on the grill briefly. Finally season with salt and pepper and serve.
