Lemon Chicken

Ingredients
- 1.4 kg chicken (whole)
- Salt
- black pepper (freshly ground)
- 250 ml poultry stock
- 1 tbsp honey
- 1 tbsp sherry
- 2 tbsp oil
- 3 lemons
- 1 bunch thyme
Instructions

Wash and pat dry the chicken. Wash thyme, shake off excess water, set aside a few sprigs for garnish.

Wash one lemon hot, grate its zest, mix half of the zest with 1 tbsp oil, a pinch of salt and pepper, then rub this mixture over the chicken. Stuff the chicken with thyme. Tie legs together with kitchen twine and cross wings on the back.

Slice remaining lemons into rounds.

Place the prepared chicken breast-side up in a fireproof dish, bake at 200°C for about 45 minutes, adding lemon slices. Gradually pour stock during baking and baste the chicken occasionally with the pan juices.

Remove chicken from oven. Whisk honey, sherry, remaining lemon zest and 1 tbsp oil. Brush chicken with this mixture and bake breast-side up at 250°C for about 5 minutes until crisp.

Arrange Lemon Chicken on a plate with lemon slices and thyme sprigs; serve with rice or your choice of side.
