Grilled Lamb Rack

Ingredients
- 1 kg lamb rack (prepped)
- 3 tbsp oil
- 2 tbsp herbs de Provence
- Pepper (freshly ground)
- Salt
- 4 garlic cloves (with skins)
- 5 pearl onions
- 0.5 cup lamb stock
Instructions

Preheat the oven to 180 °C with upper/lower heat and place a small baking tray inside. Trim the lamb back and clean off bone ends with a knife so no meat remains on them.

Trim the lamb back again, remove bone ends cleanly, then divide into pieces (about 4 ribs each). Season each piece with pepper, salt, and Herbs de Provence.

Peel and halve the pearl onions. Sear the lamb pieces with garlic and onions in hot olive oil until browned all around. Pour in the lamb stock, break up the brown bits, and transfer everything to a small baking tray.

Place the tray in the preheated oven on the middle rack and bake for about 12–15 minutes. Remove, cover with foil, and let rest for another 10 minutes in the turned‑off oven.
