Ingredients

  • 600 g soft butter
  • 450 g sugar
  • 1 packet vanilla sugar
  • 2 tsp saffron
  • 1 pinch salt
  • 9 Eggs
  • 750 g flour
  • 2 tsp Baking powder
  • 2 unpeeled lemons
  • 150 g powdered sugar

Instructions

    Beat the butter until fluffy. Gradually add sugar, vanilla sugar, saffron, salt and eggs. Rinse a lemon with warm water, grate its zest and squeeze its juice. Add both to the butter-sugar mixture. Mix flour with baking powder, sift over the butter mixture and fold in gently.

    Preheat oven to 200°C. Grease a baking sheet well with butter. To keep the dough from spilling, seal the open end of the sheet with a double-folded strip of aluminum foil.

    Spread the dough onto the sheet and smooth it out. Bake on the middle rack for about 20 minutes.

    Squeeze the juice of the second lemon. Mix the juice with powdered sugar and brush the still-warm cake with this glaze.
