Ingredients

  • 70 ml heavy cream (at least 30% fat)
  • 160 g butter
  • 75 g beetroot syrup
  • 250 g sugar
  • 0.5 tsp cinnamon powder
  • 1 pinch Cardamom
  • 1 untreated orange (zest)
  • 1 tsp potash
  • 450 g flour
  • 100 g ground hazelnuts
  • 50 ml Heavy Cream (at least 30% fat)
  • 200 g dark chocolate
  • 75 g marzipan dough
  • 1 tsp powdered sugar
  • 40 peeled whole almonds

Instructions

    Heat the cream with the butter and syrup in a saucepan until dissolved. Add the sugar, spices, orange zest, potash, flour, and nuts; stir to combine. Process everything into a smooth dough, divide into two portions, shape each into a 3 cm diameter roll, cover, and refrigerate for 1 hour. Preheat the oven to 180°C (356°F) with upper and lower heat.

    Cut the rolls into 1 cm thick slices, place on parchment‑lined baking trays, and bake in the preheated oven for about 15 minutes. Warm the cream and melt the chopped chocolate in it. Remove the finished Lebkuchen, let them cool, coat with the melted chocolate, and allow to dry. Knead the marzipan with powdered sugar and form small balls. Place these on the Lebkuchen and top each with an almond.
