Lebkuchen House

Ingredients
- 700 g honey
- 200 g sugar
- 200 g butter
- 2 Eggs
- 2 tbsp lemon zest
- 2 tbsp cocoa powder
- 1 tsp cinnamon
- 1 tsp ground cloves
- 1 tsp ground cardamom
- 1 tsp ground nutmeg
- 1 tsp ground allspice
- 1 tsp ground coriander
- 1 tsp ground ginger
- 1 tsp Baking Soda
- 1 tsp salt
- 1 kg flour
Instructions

Warm honey, sugar and butter over medium heat while stirring constantly until the sugar has completely dissolved; let cool to hand warm.

Add egg, lemon zest, cocoa and all spices. Dissolve baking soda and salt in 1 tbsp water. Add together with the flour to the honey mixture. Knead into a firm dough.

Wrap the dough in foil and rest at room temperature for one day.

Roll out the dough again, divide it in half and roll each half on a greased and floured baking sheet (about 35 x 45 cm) to a thickness of 1-2 mm.

Bake in a preheated oven at 180°C for 15-20 minutes. Remove and let cool on the sheet.

From one dough plate, a gingerbread house can be made according to the attached drawing (base rectangle 30 x 40 cm).

From the second plate you can make, e.g., a piece of floor board, decorations, roof shingles, doors, windows etc. as your imagination allows. Glue the pieces with thick icing (powdered sugar and some water – experiment with ratios!).
