Ingredients
- 125 g liquid honey
- 60 g sugar
- 50 g butter
- 250 g flour
- 2 tsp ginger powder
- 2 tsp Cinnamon
- 0.5 tsp anise powder
- 0.5 tsp clove powder
- 1 pinch salt
- 0.25 tsp potash
- 0.25 tsp deer antler salt
- 50 g orange peel (very finely chopped)
- 200 g dark couverture chocolate
- 100 g white couverture chocolate
Instructions

Heat honey, sugar and butter until the sugar dissolves, then let cool.

Mix flour and spices together.

Dissolve potash and deer antler salt in the syrup and combine with the remaining ingredients; cover and refrigerate overnight.

Roll the dough on a lightly floured surface to about 4–5 mm thickness and cut out bear shapes or use cutters. Place on baking trays lined with parchment paper and bake in a preheated oven at 180°C for about 15 minutes until golden brown, then remove and cool.

Separate melted couverture chocolates into water baths, melt them, and decorate the bears accordingly.
