Ingredients

  • 4 onions
  • 2 large apples
  • 640 g veal liver (4 slices) (pre-cleaned, skin removed)
  • Salt
  • Pepper (freshly ground)
  • flour
  • 3 tbsp germ oil
  • 2 tbsp butter

Instructions

    Peel the onions and apples. Use a core remover to remove the cores from the apples and slice them into about 1 cm thick rounds. Slice the onions into thin rings.

    Season the veal liver with pepper, coat in flour, and tap off excess flour.

  3. 3.

    Heat 2 tbsp oil in a pan and brown the onion rings until golden.

  4. 4.

    In a second pan, heat 1 tbsp butter and gently steam the apple slices over low heat on both sides until soft.

    Remove the onions from the pan and drain them on kitchen paper.

    Add the remaining oil and butter to the pan and cook the liver slices for about 2–3 minutes per side, sprinkling with a little salt.

    Plate the liver, top with apple slices, garnish with onion rings, and serve with mashed potatoes.
