Green Asparagus Salad with Tofu

Ingredients

  • 1 kg green asparagus
  • Salt
  • 3 tbsp olive oil
  • Pepper (freshly ground)
  • 1 tsp sugar
  • ½ tsp medium-hot mustard
  • 3 tbsp Lemon juice
  • 1 Green Chili Pepper
  • 150 g tofu (plain, herb‑flavored or smoked as desired)

Instructions

    Peel the asparagus and blanch in lightly salted water for about 5 minutes so it remains firm. Whisk together salt, pepper, lemon juice, sugar, mustard and oil to make a dressing.

    Shock the asparagus in cold water, place in a bowl, toss with the dressing and let cool. Meanwhile pat the tofu dry and cut into 1 cm cubes.

    Wash the chili pepper, trim the stem end with a sharp knife, remove the seeds and slice into thin rings. Arrange the asparagus on plates, sprinkle with chili rings and scatter the tofu cubes over the top.
