Leaded Asparagus Soup

Ingredients

  • 500 g white asparagus
  • 1.125 l water
  • 2 egg yolks
  • Salt
  • Pepper
  • 0.125 l whipping cream
  • 3 slices white bread
  • 2 tbsp butter
  • parsley
  • Chives

Instructions

    Peel the asparagus, cut off the woody ends. Wash the asparagus scraps and bring to a boil with the water. Cover and simmer for 15 minutes.

    Drain the white bread, dice it and fry in hot butter until golden brown; set aside.

    Pour the asparagus broth through a sieve, squeeze out the scraps and discard them. Cut the asparagus spears into about 2 cm pieces.

    Bring the strained asparagus broth to a boil. Add the asparagus pieces, bring everything to a boil once more and simmer on low heat for 5 minutes. Whisk the egg yolks with the cream and some broth, then stir into the hot soup that is no longer boiling; season with salt and pepper. Serve the soup in bowls and sprinkle with parsley leaves, chives and croutons.
