Ingredients
- 150 g sugar snap peas
- 4 Spring Onions
- 1 green bell pepper
- 1 Green Chili Pepper
- 1 piece ginger (2-3 cm)
- 700 ml vegetable broth
- 60 g rice
- 1 tbsp rice wine
- 1 tbsp light soy sauce
- Salt
- black pepper

Wash and drain the vegetables. Trim the dark green parts of the spring onions and slice the remaining stalks diagonally into rings. Cut the chili lengthwise, remove seeds and white membrane, then finely dice it. Wash hands well, peel and grate the ginger.

Place the broth in a pot and bring to a boil. Add the vegetables, diced chili, grated ginger, stir, and sprinkle in the rice. Simmer covered for about 20 minutes. Rinse coriander leaves, shake dry, chop some, then season the soup with rice wine, soy sauce, salt, and pepper before serving.
