Lasagna with Minced Meat Sauce

Ingredients

  • 300 g flour
  • 2 Eggs
  • 1 tbsp Olive Oil
  • Salt
  • 600 g lean lamb mince
  • 1 onion
  • 3 Garlic cloves
  • 2 carrots
  • 4 sprigs fresh thyme
  • 1 dried peperoncino
  • olive oil
  • 150 ml dry white wine
  • Salt
  • 600 g tomatoes
  • butter

Instructions

    Knead flour with eggs, oil and 1 tsp salt. Add a little water if needed. Wrap dough in a cloth and let rest for 30 minutes.

    Peel and finely chop onion, carrots, and garlic. Remove thyme leaves from stems. Crumble peperoncino.

    Heat 4 tbsp oil in a braising pot. Gradually add the meat, browning it in batches. Add onion, carrots, and garlic and sauté together. Stir in thyme and peperoncino. Deglaze with wine. Season with salt and simmer covered for about 1 hour, adding more wine if necessary.

    Just before the meat is done, wash, blanch, peel, and dice the tomatoes. Cook them in 1 tbsp oil uncovered for 10 minutes to reduce slightly.

    Meanwhile make the pasta. Knead dough again and divide into portions. Roll each portion into thin sheets by hand or with a pasta machine.

    Bring plenty of salted water to boil. Cook pasta sheets in batches until al dente. Drain briefly.

    Add tomatoes to the meat sauce and stir in. Season with salt and pepper.

    Melt 1 tbsp butter.

    Place four preheated plates on the table. Layer three pasta sheets alternately with sauce, drizzling each sheet with a little melted butter. Serve immediately.
