Ingredients

  • 360 g lamb fillet (2 pieces)
  • 500 g green beans
  • 1 sprig bean herb
  • 2 tbsp olive oil
  • 1 tbsp chopped thyme leaves
  • 1 tbsp chopped rosemary needles
  • 1 Shallot
  • 2 tbsp herb butter
  • Salt
  • ground pepper

Instructions

    Wash, trim and simmer the beans in salted water with bean herb for about 10 minutes.

    Peel garlic and shallot and cut both into strips.

    Stir olive oil with herbs and a pinch of salt. Brush the meat with this mixture and cook it in a non-stick pan, turning several times over moderate heat for about 8-10 minutes. Add shallots and garlic during the last 2 minutes. Season with pepper and serve on preheated plates with drained beans and herb butter.
