Beef Steak with Vegetables

Ingredients
- 2 beef steaks (e.g., loin, 200-250 g each, 2 cm thick)
- coarse ground pepper from the mill
- 2 tbsp olive oil
- Salt
- 300 g starchy cooking potatoes
- 50 ml whipping cream
- 2 Thai eggplants
- 1 small radicchio
- 2 tbsp balsamic cream
- 1 tsp sugar
- 2 tbsp oil
- nutmeg
- Sea salt
- herb butter
- herbs (as desired, for garnish)
Instructions

Wash the potatoes and cook in salted water for about 30 minutes.

Season the meat with coarse pepper, press it down, and sear both sides in a grill pan with oil for about 2 minutes each. Wrap in foil and let rest at 80°C in the oven.

Wash the eggplants and cut into strips; wash the radicchio and halve it, removing the stem generously. Fry both in oil, deglaze with balsamic, sprinkle sugar, and allow to caramelize slightly.

Drain the potatoes and press them through. Warm the cream and stir into the potatoes, seasoning with salt, pepper, and nutmeg.

Arrange on preheated plates, season with sea salt, and serve garnished with herb butter and herbs.
