Lamb Tajine with Dates and Sesame

Ingredients
- 800 g lamb (e.g., from the shank)
- 2 onions
- 2 tbsp olive oil
- 1 tbsp Ras el-Hanout
- 1 tsp ground turmeric
- 1 tsp ground ginger
- 0.5 cinnamon stick
- Salt
- black pepper (freshly ground)
- 2 tbsp sesame seeds
- 2 tbsp orange water
- 200 g dates
- 1 tbsp freshly chopped coriander

Wash the meat, pat dry and cut into large cubes. Peel and dice the onions. Brown the meat in hot oil in a tajine. Add the onions briefly, then sprinkle with Ras el-Hanout, turmeric, and ginger. Add the cinnamon stick and pour in about 400 ml water. Season with salt and pepper, cover, and simmer gently for 50-60 minutes.

Meanwhile toast the sesame seeds in a pan until golden brown. Remove from heat and stir in the orange water and dates. Cover and let rest for about 5 minutes.

Taste the meat and serve garnished with dates and coriander.
