Lamb shanks

Ingredients
- 4 small fresh milk lamb shanks (well hung)
- Salt
- oregano
- 1 onion (coarsely chopped)
- 1 large carrot (peeled and diced)
- oil (for pouring)
- 0.25 l lamb jus (glass)
- pinch of cinnamon powder
- juice (from 2 oranges, untreated)
- zest (from 2 oranges, untreated)
- flour (for dusting)
- packet puff pastry (frozen)
Instructions

Place the lamb shanks with salt, oregano, onion and carrot cubes in a casserole dish, pour some oil over them and roast slowly in a preheated oven at 130°C for 1 to 1½ hours, periodically spooning lamb jus over the meat.

Just before serving, season the roasting juices with cinnamon, orange juice and a few orange zests, then dust lightly with flour to thicken the sauce to the desired consistency.

Thaw the puff pastry sheets side by side, cut squares or carve festive shapes. Place the pastry pieces on a parchment-lined tray and bake in the preheated oven according to package instructions until golden yellow. The squares form small packets that can be tied with orange zest ribbons.
