Ingredients
- 1.5 kg lamb leg (boneless, fat and sinew removed)
- 3 tbsp olive oil
- Salt
- Pepper
- 200 g carrots (cut into very fine strips)
- 200 g celery stalks (cut into very fine strips)
- 200 g spring onions (cut into very fine strips)
- 2 tsp chopped thyme leaves

Instructions

Tie the lamb leg with kitchen twine as needed and rub with salt and pepper. Heat oil in a pan and sear the lamb leg over high heat all around. Transfer the meat to the middle rack of a preheated oven (220°C) and roast 30-40 minutes until golden brown. Five minutes before the end, add the vegetables to the meat and cook together, seasoning with thyme, salt and pepper.

For serving, slice the lamb leg and arrange on top of the vegetables.
