Lamb Roast

Ingredients

  • 1 lamb shank (about 1.4 kg, boneless)
  • Salt
  • black pepper (freshly ground)
  • 4 tbsp olive oil
  • 3 Garlic cloves
  • 4 sprigs Rosemary
  • 400 ml lamb stock

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat. Wash the lamb shank, pat dry, remove skin and sinews, season with salt and pepper. Heat the oil in a large roasting pan and brown the shank on all sides.

    Peel and crush the garlic, then add it with rosemary to the shank. Roast in the preheated oven for 1½ hours, basting occasionally with some stock. Remove the finished roast from the oven and serve.
