Ingredients

  • 4 Stalks Parsley
  • 6 fresh mint leaves
  • 100 g whole milk yogurt
  • 3 tbsp Lemon juice
  • 1 onion
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 150 g lamb mince
  • Salt
  • Pepper
  • Cumin
  • paprika (sweet and hot)
  • 2 tsp Tomato paste
  • 2 slices natural sourdough bread

Instructions

    Tear parsley from the stems and finely chop the leaves. Slice mint into fine strips. Whisk yogurt and lemon juice until smooth, then fold in the herbs.

    Peel onion and garlic and finely chop them. Heat olive oil, sauté onion and garlic until translucent. Add lamb mince and cook while stirring constantly until crumbly. Season with salt, pepper, cumin, and paprika; stir in tomato paste and continue cooking until the mince is cooked through.

    Remove pan from heat, let the mince cool slightly, then mix with herb yogurt. Taste again if needed and serve with bread.
