Heaven and Earth with Bacon

Ingredients
- 1 kg potatoes (mostly waxy)
- Salt
- 4 apples
- nutmeg powder
- 3 onions
- flour (for dusting)
- 2 tbsp butter
- 120 g bacon cubes

Peel and cut the potatoes into small pieces. Cover them with water in a pot, add salt, and bring to a boil. Cook covered for about 15 minutes.

Meanwhile, peel, core, and dice three apples. Wash, core, and slice the remaining apple thinly.

Peel the onions, cut into rings, and dust with flour. Heat 1 tbsp butter in a pan and brown the onion rings golden brown. In a second pan heat the remaining butter, then lightly brown the apple slices and bacon cubes.

Drain about half of the potato cooking water, add the apple dice to the potatoes, cover, and cook for another 5-10 minutes until both are tender. Drain any remaining liquid, mash the potatoes and apples into "Heaven and Earth," season with salt and nutmeg. Plate on dishes, topping with onion rings, bacon, and apple slices.
