Lamb Goulash with Beer Sauce and Beans

- 800 g lamb meat (from the shoulder, trimmed)
- Salt
- Pepper (freshly ground)
- 2 onions
- 2 tbsp oil
- 2 tbsp Tomato paste
- 400 ml light beer (or alcohol‑free alternative)
- 200 g Green beans
- 100 g Dried Apricots
- ground cumin

Wash the lamb meat, pat dry and cut into bite‑size cubes. Peel and finely dice the onions. Heat the oil in a pot and brown the lamb pieces all around. Add the onions and cook until golden brown. Stir in the tomato paste, pour in the beer, and simmer gently for about 1½ hours with occasional stirring; add more beer if needed.

Meanwhile wash, trim and blanch the beans in boiling salted water for about 8 minutes, then drain, rinse, and set aside. Slice the apricots into strips and add them to the goulash with the beans about 10 minutes before the cooking time ends. Season with salt, pepper, and cumin, then serve.
