Ingredients

  • 500 g green beans
  • 150 g red onion
  • Salt
  • Pepper
  • 500 g lamb loin (cut)
  • 100 ml lamb stock
  • 3 tbsp olive oil
  • 2 tbsp butter
  • mint
  • 100 ml White wine
  • 150 g well‑chilled cream yogurt

Instructions

    Rinse, trim and cut the beans in half. Boil in salted water for 8-10 minutes. Drain, shock with cold water and set aside. Peel and slice the onions into strips.

    Rub the lamb loin fillet with salt and pepper. Heat olive oil and sear the fillet all around. Add lamb stock, cover, and simmer for 12-15 minutes. Let rest for 10 minutes before slicing.

    Heat butter. Sauté the onion until translucent. Deglaze with white wine and add the beans. Season with salt and pepper, then fold in half of the mint. Cook for 3 minutes.

    Slice the lamb fillet, drizzle with the braising liquid, and arrange on a plate with the beans. Mix yogurt with salt, pepper, and remaining mint; spoon over lamb and beans before serving.
