Lamb Chops with Vegetables

Ingredients
- 1 Zucchini
- 1 eggplant
- 3 bell peppers (red, orange and yellow)
- 4 tomatoes
- 1 onion
- 2 Garlic cloves
- 6 sprigs Thyme
- 4 tbsp olive oil
- Salt
- Pepper
- 12 lamb chops (with fat cap)

Wash and trim the zucchini and eggplant. Wash the bell peppers, halve them and trim. Cut all vegetables into small cubes. Briefly blanch the tomatoes, cool, peel, quarter, seed and cube. Peel and finely chop the garlic. Rinse the thyme, shake dry and strip leaves from 2-3 stems.

Heat 2-3 tbsp oil in a pot, sauté the eggplant cubes over medium heat for about 2 minutes while stirring. Add zucchini, bell pepper, onion, garlic and thyme, cook another 1‑2 minutes. Stir in tomatoes, season with salt and pepper, cover and simmer on low heat for about 5 minutes until just tender.

Rinse the lamb chops, pat dry and season with salt and pepper. In the remaining oil, brown the chops in a non‑stick pan for 5‑6 minutes, turning occasionally. During the last 2‑3 minutes add the remaining thyme.
