Lamb Roast with Garlic Herb Crust

Ingredients
- 1400 g lamb rack (4 lamb racks; pre-trimmed)
- Salt
- Pepper (freshly ground)
- 2 tbsp Vegetable oil
- 2 sprigs Rosemary
- 2 Garlic cloves
- 1 egg yolk
- 4 tbsp liquid butter
- 3 tbsp white bread crumbs
- 2 tbsp medium-hot mustard
Instructions

Preheat the oven to 140°C with fan and top heat.

Rinse the meat, pat dry and season with salt and pepper. Brown in hot oil on all sides and bake on a rack (with fat pan underneath) for 25-30 minutes.

Wash rosemary, shake dry, pluck leaves and finely chop. Peel garlic cloves and finely chop. Mix egg yolk, rosemary, butter, and breadcrumbs together.

About 15 minutes before cooking is finished, brush the lamb with mustard and spread the herb mixture over it.

Remove from oven and serve sliced as desired.
