Ingredients

  • 4 large lamb chops
  • 1 tbsp sumac
  • 1 tbsp Sesame seeds
  • 6 tbsp Olive oil
  • 4 stalks celery
  • 2 apples (e.g., Cox Orange)
  • 4 tbsp apple cider vinegar
  • 1 tbsp Lemon Juice
  • 1 tbsp honey
  • Salt
  • 20 g toasted pine nuts

Instructions

    Rinse the lamb and pat dry. Mix the sumac with the sesame and 2 tbsp oil, then brush onto the lamb. Cover and refrigerate for about 1 hour.

    Wash the celery, roughly chop the leaves and slice the stalks into rounds. Wash the apples, quarter them, remove the core, and cut the quarters into thin strips. Whisk the remaining oil with apple cider vinegar, lemon juice, and honey; combine with the prepared salad ingredients. Season and let rest for about 20 minutes. Then fold in the pine nuts and adjust seasoning.

    Sear the chops in a lightly oiled pan over medium heat, cooking each side for about 10 minutes until browned but still juicy.
