Ingredients
- 700 g meat (from the leg of lamb)
- 5 onions
- 40 g currants
- 12 apricots
- 3 tbsp olive oil
- Salt
- pepper (ground)
- 1 tsp cinnamon
- 1 tsp cardamom
Instructions

Peel and dice the onions. Cut the meat into bite-sized cubes. Heat oil in a pan and brown the meat in batches all around.

Add the onions, cook until translucent, season with spices and add the currants.

Cover and simmer over low heat for about 1 hour, adding water occasionally.

Wash, pit, and quarter the apricots. Add half of them to the pan, stir well and taste.

Simmer for another 30 minutes.

Add the remaining apricots 10 minutes before the end of cooking, do not stir further so they don’t break apart.

Serve with couscous prepared according to package instructions.
